Cast iron handles replaced pulled iron handles in French copper ware from 1850 to 1852. This pan is older than that. What this means is this pan was produced between 1820 and 1850.... It could date back to the 1700's 18th century. It is Extremely Rare and Valuable.

Here is a superb Copper Spayed Sauté Pan. I really like this type of manufacturing that I know well.It has the distinction of having walls very intelligently manufactured. GAILLARD and others have also manufactured with this method. The walls are thinner at the top (measured at the top edge) and they are thicker downhill towards the bottom of the pot. The advantage of this type of manufacturing is interesting on several levels. In reality it's useless to have a big thickness at the top. Nobody fills his copper pot until the overflow. So why make a big thick copper at the top? The interest is to have a good thick, I say from 2cm below the top edge. For the user the pot becomes less heavy and it keeps a great culinary interest! The problem is that if you do not know how to detect this type of manufacturing, you can find a pot of 2mm thick at the top edge and in reality it can be 3mm, 3.5mm, 4mm and more! But as you measured 2mm, you ignore this pot and you pass next to a treasure! There is no term to explain this. So I invented one and I call it simply "thickness of the usable surface".
